Thanks for your reply! My PS/2 mouse is on IRQ 12, so it shouldn't have any influence on the sound device (indeed moving the mouse around didn't show any effect). The VT8233 shares IRQ 5 with a RealTek PCI ethernet adapter. In order to see if the network adapter was the cause of the problem, I disabled it (shut down eth0, removed the driver module 8139too) so that the VT8233 was the only device on IRQ 5 as reported in /proc/interrupts. But the noise is still there, it's a permament high-frequency noise, doesn't seem to be caused by interrupt latency or similar.
