OK.  So did that error message mean that the number of channels in the
file I was trying to play didn't match the number of channels
available on the device?  And I guess using plughw performs an
automatic conversion?

After 'aplay -Dplughw:1,0 /usr/share/sounds/phone.wav', I get the
following output:

Playing WAVE '/usr/share/sounds.phone.wav' : Signed 16 bit Little Endian, Rate 
44100 Hz, Stereo

... but no sound, and no return to the shell prompt unless I use control-C.
