First, you won't "change out" your tar, you'll just have another one
available.  I don't think anyone actually replaces a vendor non-GNU
/bin/tar with GNU tar.  It will get installed in (e.g.) /usr/local/bin.
If you're concerned about anyone getting confused, I usually install it
as gtar so there's no name conflict.

The main reason to install GNU tar is that Amanda won't work without
it :-).  GNU tar has a lot of extra features standard vendor versions
of tar do not, and Amanda depends on them.  In particular, incremental
backup capabilities.
