If you set up amanda.conf to point them at directories the Amanda user
can create things in (or left the defaults), then it should take care
of them automatically for you on the first run.

I'm not sure what you mean when you say you changed root's crontab to
have the dump done as operator.  If you added a root crontab entry to
su to operator and do the work, that's probably OK.  Whether you do it
that way or make an explicit operator crontab kind of depends on your
own administrative preferences.
