Thanks guys!  Once I deleted config.cache (which had the bad smbclient info)
configure was happy with the smbclient this time.  ;^)

Another thought:

--with-smbclient=/path/to/smbclient should _not_ be the only path 
containing the smbclient binary but the binary itself!

So configure with

--with-smbclient=/usr/local/samba/bin/smbclient

should work.
