These two configure options might be interesting: --without-debugging --with-debug-days=NN (which defaults to 4)
(the help message cryptically indicates "--without-debugging=/debug/dir" but you ony need a path for --with-debugging=/debug/dir obviously)
Or, alternatively, you could find out why your debug files are so large (warning messages? samba no-access messages?).
