I have used both aproaches, largely depending on how long I think the dump will take and how much of the tape I think we are likely to consume. I'm also more likely to run a complete dump initially for 'new' services where the server is just being put online and there is still data/services being migrated to it. As when we started to migrate all of the user home directories to a new platform and the old platform was still in production.
