The following variables (which represent various faces of the host name) are 
already part of policy banks, as documented in amavisd.conf-default:

$localhost_name
$smtpd_greeting_banner
$smtpd_quit_banner
$notify_xmailer_header
$X_HEADER_TAG
$X_HEADER_LINE
$hdrfrom_notify_sender
$hdrfrom_notify_recip
$hdrfrom_notify_admin
$hdrfrom_notify_spamadmin
...

so these can be switched on-the-fly based on incoming port number
and other data (socket type, MYNETS).

Of these probably the most useful for establishing different host
personalities are the $localhost_name (controlling the HELO during
mail forwarding, and host name inserted into Received header field),
and $smtpd_greeting_banner.

The use is illustrated in amavisd.conf-sample,
search for: smtpd_greeting_banner.

Besides the above variables, there is also a $myhostname, representing a
more static nature of the host. It would be possible to make some of its uses
more dynamic (but not all, uses outside of SMTP session can not be dynamic). 
I'll see what can be done. It is also planned to make syslog ident and syslog 
facility part of policy banks.
