At log level 5 you would see: appending addr ext '...', giving ... or replacing addr ext '...' by '...', giving ... if it works, and the MTA log should show changed addresses, as Gary noted. Perhaps you have local_domains set incorrectly. Only recipient addresses which match local_domains are subject to appending address extension.
