Depends on diversity of users base. With ISP a global bayes probably
does not work well. Within a single business environment it works
quite well, possibly even better then a per-user bayes would.

Yes, postcat is the right tool if the message is still in a queue.
If you want to experiment with a captured message, just strip the 
postfix-specific head and tail of the postcat result with a text editor.
