Use ls -al to see hidden directories.

I have never used dovecot so I'm not sure how well maildrop works
along with it, but read this for one possible idea:

http://www200.pair.com/mecham/spam/maildroprc.txt

Possibly you could modify it for your Maildir structure, changing $HOST/$USER
to $RECIPIENT and courierimapsubscribed to subscriptions, etc.

The hard part is testing this sort of thing on a production server.
It's almost certain there will be an unforeseen issue or two until
you get it dialed in (if it works at all in your environment).
