The only segfaults with 2.5.4 that I'm aware of are in the SA ImageCheck plugin and possibly in some regexps in SA rules (certain SARE rules). Which version of SpamAssassin are you using? The failing processes must have left a temporary directory behind, find it by the PID of a crashing process - the same PID appears in a directory name - actual mail is in file email.txt within that directory. See if there is anything unusual about a message. See if a crash can be repeated at will when sending the same message again. Collect a level 5 amavisd log of a crashing process, which will narrow down the code area to investigate. If it turns out it is crashing within a SpamAssassin call, turn on the $sa_debug.
