I have a fair bit of technical documentation on the various log formats
in the Summary manual at <http://summary.net/manual/log_formats.html>. It
many not answer all of your questions but it is a fairly good start.
The quick answer is that you should use the W3C ExLF format because it
lets you select which fields get logged.
