Setup -
MS NT4 Server SP6, IIS 4 W3C Extended Log all extended
logging options, analog 4.11

When I browse with the Lynx program, on a Linux box the Browser
Summary and Report pickup the names okay.

As

I am assuming (looking above lines) that the (guess) 
this depends on the User-Agent Header getting sent from
the client for the server to log? It looks like the cs-UA
includes both the browser+os, where the os is extracted from
the first two parameters within the (......)

Looking at the Lynx config, the UA is
Lynx/2.8.1rel.2+libwww-FM/2.14
which is editable field.

Before I go changing things I was wondering -
I am looking at the right things to resolve unknown OS types?

Where can I get a list of UA strings?
