Hm, this is what it says:

To exclude the site completely, just use
REFSITEEXCLUDE http://my.host.com/

Maybe it's too early for me, but that's what I initially did, but I still saw 
http://my.host.com/ in the Referrer Site Report.  Only when I appended the * to the 
above like you suggested did http://my.host.com/ disappear.

The log is a combined log (Apache) with the default entries + referrer and user-agent.

But the * works, so I'm happy :)
