You might also consider filtering the log file (if you have a good algorithm for the date manipulation necessary) - either on its way in to analog, or as a separate process.

There is no built-in way of doing this. The FROM/TO commands can only be applied once. If your log files are archived/rotated daily you could specify only the Mon-Fri log files with your LOGFILE command.
