It completely doesn't matter. Whatever makes sense for you.

The Carbon version of Analog is unable to read files in /private (an 
Apple enforced limitation on Carbon applications). The Darwin version can 
read them there. For the Carbon version you will probably need to move 
your logs elsewhere.

The CustomLog directive. Read the httpd.conf file for examples or go to 
the www.apache.org web site and read their docs.
