If your server is generating daily logs, then just run analog ex050212.log (for example). If Your webserver is generating Monthly logs, then you could do something like analog ex0502.log +C"FROM 050212:0000" +C"TO 050212:2359" http://www.analog.cx/docs/include.html#FROMTO (Or you can put the From and To commands in your Analog.cfg file).
