Create a custom LOGFORMAT, and use an otherwise unused field for your new string - for example %u if you aren't currently using the User Report.

Unique users isn't included in the General Summary, but you can see the total number of unique users in the User Report. if you're not using the Host report, it might be a better choice, because the nmber of Distinct Hosts is listed in the General Summary.

If you post one or two lines from your custom logfile, I'll suggest a LOGFORMAT that might work.
