I'm new to using analog and I'm finding a few things slightly
perplexing. I'm trying to find how many viewing sessions a
particular section of our site has had. Is there an easy way to get
actual viewing sessions rather than page requests? We're counting
every session for the same viewer individually.

Analog analyses log files. If there's a field in your logfile that indicates which "session" a particular line in the logfile belongs to, then Analog can report on that information - you would usually do this by defining that Session field as the User field, and turning on the User Report.

If your logfile doesn't include information about sessions, then Analog can't report on sessions.

I also need to
exclude certain visitor addresses but I think I understand how to do
this though confirmation would be useful.

You can exclude requests from specific IP addresses using the HOSTEXCLUDE command.
