This is what they call it in telecommunication industry (FOTA) Firmware over
the Air. In your case, T-Mobile has an updated patch to your phone and they
wanted to send you this patch over the air instead of going to them and do
it.

This feature has been implemented in a lot of phones recently and it is safe
since you are getting it from your carrier. Since you have chosen Update
later, you don’t have to worry about losing the new patch, it will come
again to ask you if you want to update the phone or not. But don’t chose
Update Later more than 3 times because the update will be canceled and in
this case you will have to go to setting and check the software update from
the phone it self (they call it Client Initiated session, which means the
user will ask for any update if there is any)
