If you follow the instructions you should be fine. In case of you
messed up one of the steps you could start from a previous step if you
know what you did wrong. If not you might have to start from the
beginning of the procedure.

The procedure is reversible if you have the original image files. If
your phone switches off during the flash procedure (because off your
battery  was not charged enough or other reason) you have to send in
your phone to get it fixed. If you have a JTAG cable you might be able
to fix things on your own.

In general rooting should be a pretty safe procedure but it is similar
to when you go to the doctor and have to sign a paper before the
surgery. Sometimes thing can go wrong ....
