I've used 2 methods to create videos for my apps.
1. Point the camera and shoot
example: http://talkingandroid.com/2010/02/12/moviefone-on-android/
2. Use iShowU app on the Mac to take video from Emulator
example:
http://talkingandroid.com/2009/09/01/droiddrop-preview-drop-io-on-android/
I've found that I can do a good video with a good camcorder (Canon GL1). The
results from a Flip camera were too fuzzy.
Sometimes you want to get the action of interacting with the phone.
Sometimes the emulator or having other apps up on the computer has
advantage.
For a demo, I try to be natural and do 1 long take. If I edit I am using
old ulead studio software.
