You say "2 problem", but what you describe as #1 does not sound like a problem. Of course a build for Ubuntu will be only for Ubuntu. What were you expecting?
As for #2, double check the license on the Email etc. Android OS is open source, but not every application running under Android is also open source. If it is not, then of course you won't find the packages in the source for Android OS. Finally, questions about building Android OS really belong in one of the groups listed at http://source.android.com/community/index.html. Read the list and decide for yourself which is really the best match for what you are trying to do.
