As Cull told you there is no need to worry about that, the market won't let you upload a new version if it as been signed with a different key. You'll get an error and that's all.
For you second question, I guess if the line with the [certificate is valid from 16/10/10 19:48 to 03/03/38 18:48] shows the same exact date and time for the from section, its pretty safe to assume that it is the correct certificate.
