I have also been experiencing issues with the honeycomb emulator (Ubuntu 10.10). I am just hoping that the source gets released soon so I can build it from scratch and load that image into the emulator...
In the mean time, I suggest using 2.2 or 2.3 for developing, then move it over once the 3.0 emulator functions properly.
