I assume you mean the market app itself. As far as I know, the only way you can prevent that, is to take your device off of WiFi AND 3G/4G (if applicable) Basically, never, ever connect it to any network again. NEVER. As soon as you do, it'll update. Actually, you could probably block it by creating your own custom ROM, but I'm not sure, and this is the wrong list to discuss that, anyways.
