RTFM. The Eclipse documentation covers your scenario.

You can close projects. You can delete projects. You can keep separate 
workspaces, and 
even create icons that invoke Eclipse separately for each workspace.

"Couldn't quite get my head around that" is a very bad sign for your growth 
as a programmer.
Especially because you used it as an excuse to give up.
