I guess my point is this: once they have the device, there isn't much you can really do. If you have full device encryption, you can prevent data loss: but very few people do that.
And for the record, I don't think taking the battery out of a phone would be at all suspect to onlookers: just say that it crashed and has to be rebooted. (I see people doing this all the time.)
