Delete apps on the emulator just like you would on a hardware phone. Press the Menu button. Select Settings, then Applications, then Manage Applications. Select the app you want to uninstall. There will be an "Uninstall" button for that app. Just click it and it will uninstall.
Alternatively, you can type "adb uninstall com.mypackagname".
