I've looked into this issue. Jon is correct. The number shown in Market is from the contact information for each app. He is also correct that the publisher site prepopulates this with the number from your profile.
You can simply empty out the phone number field in your application records on the publishing site. Note due to client and server caching it may take a while for this change to be reflected in the Market application. We should either not prepopulate this field when you are publishing an application or make it explicit in "Why do we ask for your phone number" section that the default behavior is to prepopulate this data and that you should remove the data from the field if you don't want your users to be able to contact you by telephone. Sorry that the default behavior was not more explicit, but also always make sure to double check form data before submitting!
