I'll tell you what -- it's even better than that. I don't know how I missed it the first time I looked, but in both gmail and the e-mail app you can set it to "silent" so I'm giving that a try.
Thinking about it a little more, I blame it on my unfamiliarity with the phone... I was looking in the PHONE settings rather than going to the app (gmail or e-mail) and hitting MENU while in the app. In there you can change SETTINGS for the individual app, which includes different ringtones, silent, etc. Sorry for bothering everyone...
