It looks like you messed up the download. In order to update using the recovery console, the ZIP files MUST be UNALTERED. How are you downloading the files? Do you use windoze? Do you have an antivirus installed? Do you have a VIRUS? These things may mess with your zip file update archive and break the signature.
I suggest using LINUX and FIREFOX (or even better WGET) to download the file and copy it to the phone.
