Gtalk is one of the smartest IM clients I have used (not sure if it is
like that with all of the clients based off of XMPP or not) but if you
have two clients open (one desktop, one pc, or two separate mobile
devices in your case) both will show the incoming message.  Which
everone you reply from will be where the conversation will
automatically continue.  If a certain amount of time passes with no
comments and suddenly they start talking again, both will start up
again waiting for you to tell it which location you want to continue
talking from.

As for latitude, I didn't have the chance to test it, but I am
guessing it will be like Hong said, back and forth trying to figure it
out.
