If it's quoted text you shouldn't really alter it.

I've seen quoted text with chunks removed and in-line response which altered 
the whole tone of the original email. One example was a list of 10 points in 
the original email that was reduced to the 3 most extreme points and forwarded 
on to management with a comment saying "jeez, this guy is really out there, can 
we degrade his support level?".
