What client are you running? Outlook 2007 or Outlook 2010? This is just such a pain in the butt. I've purged my "Suggested Contacts" for my Outlook 2010 client aka "Roaming Autocompletes". As soon as I type a brand new email address into Outlook upon the next sync that address will be in the contacts of my Droid2 running Android 2.2.
