Most carriers are resistant to have a VOIP app on the phone, so this
is currently not a high demand feature for us. I can imagine that will
change as the market evolves.

Architecturally, I don't see that this involves OpenCore at all, other
than perhaps making use of software codecs if the device doesn't have
hardware codecs. The latency requirements are far too stringent.
