Well it should be generated in the core/target directory...do you ever
see the DDL generation occurring during the build?

You mean the DDL files? Take a look in <your project>/core/target
directory after you build. You can also create and drop the schema
with
the create-schema and drop-schema goals in <your project>/maven.xml
In the previous version some time ago it worked ok.
