Can I modify the existing java cartridge to do this?

Sure...just add what you want to that cartridge.

When I generate a project with maven, it's always a J2EE project. Can I avoid
this? I just want to generate some java classes from a UML diagram.

No way to avoid generating a J2EE project, if you want to generate a project,
you'll need to modify it after its generated (just remove what you don't
want/need).
