Should that version be the oldest bitbake that the current metadata
should work with?

Thinking about it, I don't think it brings much, besides maintenance
hassle. On the other hand, checking out an old revision in the future
checks out a compatible bitbake along with it.

As an alternative, why not just keep the minimal bitbake version in
the metadata?
