Problem solved.

The problem is on the build-system, the PC.
The shell on my Ubuntu system /bin/sh was symlinked to dash.
I changed it to bash and rebuilt all of the Angstrom distribution, now it boots 
!

The Problem seems to be quite common with other distributions - maybe this 
should go into the Angstrom FAQ aswell:

Note: If you are using an Ubuntu distribution, it is likely that /bin/sh is 
linked to /bin/dash. If this is the case, then you will need to change /bin/sh 
to link to /bin/bash. Neglecting to do this will cause file corruption and your 
build image will not boot!  Run "sudo dpkg-reconfigure dash" and answer no when 
asked whether you want to install dash as /bin/sh.
