New plunk clarifies/obviates what i learned re: bindings. Watch objects and arrays (javascript things that are passed by reference) so what i was trying to do with array indices or function return values on Ctrl scope didn't behave as i thought they would. $scope.$watch can be helpful, but it could also change the way model updates are interacted with on the controller (uncomment a block in the plunkr) My confusion wasn't due to some angular black magic... just javascript!
