I mucked around with ng-grid for quite some time before I discovered that there is a scope level above the "div" with the ng-grid attribute. That is where the watchers are. By putting my controller in a div "above" the div with the ng-grid attribute, I was easily able to update both the columnDefs and data on the fly.
