Having very recent experience with something similar, I would say you'll need a 
week to set up and adjust your workflow. Then, if your code is mostly in 
services and if you had component based approach, "just changing the bindings" 
will take a few weeks to few months, depending how much work have you done.

But the thing is now just the start and you will probably need a few more 
weeks/months to do adjustments, move bindings from direct to services, from 
promises to observables, from JavaScript to typescript, to really get into the 
spirit of the switch to angular 5.

Of course, that's very rough outline and it really depends on your team, your 
code, experience etc.
