In the Angular world, AngularJS references to the original version (the 1.x 
range) and Angular references to the actual current version (now 7).

AngularJS might be a bit easier to learn, but I would not recommend that 
anymore.
The current version will suit your needs and is even easier for you to 
learn (here I take your background in account)

For the backend stack, ASP.net Core is quite fine. You don't need to 
generate/keep any HTML on the backend anymore, you just provide REST or 
oData endpoints. (or anything else you are comfortable with) Just serve the 
data you need.
