propertyfile optional task puts slashes in values

If you reread the quote ("The key and value characters #, !, =, and : are 
written with a preceding slash to ensure that they are properly loaded") 
carefully you will notice that it's stated that the key *and* value characters 
#, !, =, and : are escaped with a preceding backslash.

So <propertyfile> works exactly as java.util.Properties.store().
