Can i build depending on the release tag?

Hi all,
     In my current project i need to build the system by checking out
everything from cvs and making as a war file.
    I have a question here.Can i build the script by specifying which
release tag i want to rebuild? if i have (say RELEASE_1_0 & RELEASE_1_1)
