The demos use the the MooTools client (APE_JSF/Clients/MooTools.js) For you to use jQuery you will need to use the JavaScript client (APE_JSF/Clients/JavaScript.js)
All APE demos use the MooTools client so you will need to start from scratch, although there are some examples in the web using the JavaScript client which you could use as a starting point.
