Are you using the a build from the git repository?

I have my server running as a daemon and the pid file is been written
correcly. I even have a cron job that checks a proccess with the pid stored
in the file is running, if it is not than it starts the server.

Probably the reason why the pid file is not written when not in daemon mode
is because the server would be running in the foreground and it would die
with the terminal or session.
