Yep, I managed to fix it with help from Mikel and Jonathan... Basically the problem was that we had an Apache module "php5filter" installed instead of "php5". I'm not sure why it suddenly broke, if someone ran an upgrade, or if the service spontaneously restarted itself. Anyway, it's fixed now :)
